The week of Christmas 2011, a good friend of my husband had been given a wild canadian goose. He neither had the time nor inclination to cook it. So I volunteered and after some research found out that you can't cook a wild goose like a domestic goose, Wild goose is not fatty and will dry out if not cooked properly. This method cooks the goose breast side down in aromatic broth/seasonings, then turn right side up for final browning. While I don't care for goose myself, everyone said it was delicious!
